In further celebration of our birthday week, we are sharing a few family-favorite treats.
If you've never had a Texas Sheet Cake, it is a real treat. It's a very thin chocolate cake with a rich, chocolate frosting. Warning, though--you cannot eat just one piece!
Texas Sheet Cake
Preheat oven to 400 degrees.
Sift together in a large bowl:
2 cups flour
2 cups sugar
Bring to a boil:
2 sticks margarine
4 tbsp. cocoa
1 cup water
Pour boil mixture into flour-sugar mixture.
Add:
2 eggs, mix well
1/2 cup sour milk (1/2 T vinegar or lemon juice and enough milk to equal 1/2 cup. Stir and let stand for 5 minutes before using.)
1 tsp. baking soda
1 tsp. vanilla
Beat well and pour into greased and floured jelly roll pan. Bake for 20 minutes.
Frosting
Bring to a boil:
4 Tbsp. cocoa
1 stick margarine
6 Tbsp. milk
Add:
1 lb. box of powdered sugar
1 tsp. vanilla
1/2 cup nuts (optional)
Frost evenly over top of cake.

If you're looking for a treat that's not too heavy, we highly recommend this Oatmeal Cookie recipe. Even for those who aren't big oatmeal cookie fans, these cookies are a hit!
Oatmeal Cookies
Ingredients:
- 14 Tablespoons of softened salted butter
- 1/2 cup of granulated sugar
- 3/4 cup of packed brown sugar
- 2 large eggs
- 1 1/2 cups of flour
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1/2 teaspoon of salt
- 3 cups of uncooked quick or old fashioned oats
- 1 cup of raisins
Directions:
Step 1 - Preheat oven to 350 degrees
Step 2 - In a large bowl, use an electric mixer to beat the butter and sugars on medium speed until creamy and smooth.
Step 3 - Add the eggs and vanilla and mix well.
Step 4: In a separate bowl, combine flour, baking soda, cinnamon and salt together. Add mixture to large bowl.
Step 5 - Mix the oats and raisins into the large bowl.
Step 6: Bake for 8-10 minutes or until lightly golden brown.
Step 7: Let cool then store or eat!
