For me, this recipe is synonymous with summer! I bring it to cook-outs or prepare it when entertaining at our home. It's delicious and makes plenty to feed a gathering of at least 12-15 people.
Ingredients:
2 cans of corn, drained
2 cups of shredded cheddar cheese
1 cup of red onion, chopped
1 cup of green bell pepper, chopped
1 cup of mayo
1 bag (10.5 oz.) of Chili Cheese Fritos, crunched
Directions:
Mixed everything together, except for the Fritos, in a large glass bowl. Chill overnight. Before serving, crunch the Fritos in the bag and then add to the salad and mix through.
