I mentioned in an earlier post that I make an exception to my distaste for grocery shopping only when it comes to Costco and Trader Joe's.
I'm hoping to expand on my love of Costco in the future with "Mom favorites" and their great snack selection, but the focus today is on easy meals for families. With kids activities starting back up, and some folks returning to a traditional work and school schedule, these easy meals may come in handy.
Breakfast
Naked Juice - They come in a variety pack of 12 half-size bottles, which is a good portion for adults and kids.
Coffee - Costco has great prices on two-pound bags, and the Kirkland brand is prepared by Starbucks! I just picked up a bag of my seasonal favorite--Winter Blend.
Frozen Fruit - Our recent favorite is pre-packaged with spinach for smoothies. We can use one package and combine with Costco coconut water or almond milk, and it's enough for my two kids and me!
Lunch/Dinner
Stuffed Zucchini - I think this is seasonal, so I can't find it at my Costco right now, but when you find a stock, grab several and freeze! This is a delicious, hearty, vegetarian meal.
Rotisserie Chicken - Costco is famous for their inexpensive and well-prepared rotisserie chicken. I often purchase a whole chicken and then grab a package of their pre-pulled rotisserie chicken meat to put in a Couscous Salad or tacos.
Gluten Free Chicken Nuggets - This is an easy kid favorite that adults enjoy too. They are great in the air fryer!
Chipotle Bean Burgers - We eat these plain, or with fried eggs and avocado for a protein-packed, vegetarian meal that is full of flavor.
Tortilla Soup two-pack - Add some tortilla chips and guacamole and this takes care of a fall weeknight dinner. For a family, I'd recommend preparing both packages of soup.
La Terra Fina quiche two-pack. We love the Spinach and Artichoke version, so we always eat that one first. But the broccoli cheddar is tasty too.
Salmon - The bag of wild-caught individual portions is handy for during the week, and Costco's fresh salmon is so tasty for a weekend bbq.
Mac & Cheese - You can always find this family favorite in the prepared foods section.
Street Tacos - We usually do some form of tacos during the week, so every once in awhile I pick these up from the prepared foods on a Sunday for Taco Tuesday.
Frozen Sweet Potato Fries - These are a great side dish to the Rotisserie chicken, Nuggets, Bean Burgers or Salmon listed above (and cook them in your air fryer--an item you may even be able to pick up at your warehouse too!).
Um...wine. I'm a big fan of the Kirkland Malbec right now.
