Today, I'm sharing an easy dinner that barely qualifies as a recipe, but is filling, delicious, healthy, inexpensive and shelf stable! At least once per month, we have a bean bowl dinner. We often enjoy these sans meat, but if we've got leftover chicken or steak, it makes a great addition to any bowl! Like I said, you can toss this together with basics from your pantry and freezer.
Base
Start with your favorite rice or quinoa. I fill about half a standard bowl up with this base. We typically use a microwave brown rice blend, but sticky white rice or quinoa works too.
Protein
For our protein, we most often open a can of basic black beans, but often sprinkle sliced almonds on the top as well. Other options include:
Chickpeas
Chicken
Steak
Nuts - almonds or walnuts
Fruits and Veggies
Go crazy! I throw in just about anything, and it all works. If you've got leftovers or a small amount of something, this meal is a great way to use the rest. My top suggestions:
tomatoes
air fried broccoli or cauliflower
roasted squash
craisins
cucumbers
avocado
peas
Sauce
It really depends on the flavor profile you're going for, but you can add pizzazz and moisture to your bowl with your sauce. We put them all on the table and let everyone choose their own.
Cholula
Chipotle
Sriracha
Premade guacamole
Vinegar and oil
Feel free to add a little green onion, sesame seed, or chopped nuts to the top, and voila! Healthy and delicious.
