I'm kicking off this school year with a rededication to healthy breakfasts and lunches for our family. There are a couple of really easy ways I'm doing this, all of which combined take no more than 15 minutes at the beginning of the week.
Fresh Fruits
At the beginning of the week, I wash two pounds of fresh strawberries in a mixture of water and apple cider vinegar. I let them soak in a large bowl of this combo for about 10 minutes and then I rinse them. I chop the tops off, and portion them into glass storage containers for the week ahead. These make a great addition to toast or cereal for breakfast!
This time of year, I also buy a big bag of grapes at the beginning of the week and portion them into containers to grab and stick in the lunch bag each morning.
Fresh Veggies
Favorites in our home are fresh mini cucumbers and carrot chips. So, at the beginning of the week, we wash and portion these into containers or Ziploc bags to add to lunches each morning. If you have a reluctant veggie eater, a small container of ranch can also be added!
