One of my goals this year is to really figure out how to make weeknight dinners that are nutritious and enjoyed by everyone in my family. Sounds easy, right? Not so much. I have a few picky eaters, and there's some dislike of crockpot meals and pasta. Also, we all want a little variety now and then.
However, in my constant quest for the perfect weekly menu, I've found a few go-to options that most of us enjoy. I'll also share where I purchase these in case you'd like to try them with your own family!
Quiche - I grab this two-pack of egg white quiche at Costco. We like the Spinach & Artichoke best, but they are both tasty.
2. Bare Chicken Nuggets and Veggies - These are from Costco and are a ringer for Chik-fil-A. I also grab a bag of frozen veggies and put it all in the air fryer for a crispy meal that delights everyone and offers a nice healthy side dish.
3. Potstickers with Jing's sauce - I like the veggie potstickers at Trader Joe's and the chicken ones from Costco. You just pan sear them while steaming (though I've heard the air fryer works too). The key to the meal is Fly By Jing's sauce. I'm about to add this to my Subscribe & Save with Amazon, because potstickers just aren't the same without it.
4. Sea Cuisine Honey Chipotle Salmon with rice and veggies - This flavorful two-pack is available at our Target and local grocery stores. I bake the fish in the oven while air frying veggies and microwaving a brown rice or quinoa for the side.
