Tuesday Morning Tidy: Spring Roll Salad

Try this delicious and easy salad by Kale Junkie that's perfect for the warmer months. It's light and refreshing!


Ingredients:


Salad:

  • 8 oz. pad Thai noodles

  • 1 lb. shrimp peeled and deveined

  • 1 cup purple cabbage, finely shredded

  • 3 cups lettuce chopped

  • ¾ cup shredded carrots

  • ¼ cup cilantro, chopped

  • 1 bunch green onions, finely chopped

  • 1 lime, juiced

  • sesame seeds to garnish (optional)


Dressing:

  • ½ cup creamy peanut butter

  • ¼ cup coconut aminos or soy sauce

  • 2 Tablespoons rice vinegar

  • 2 Tablespoons ginger, freshly grated

  • 3 Tablespoons water (or more, if needed)


Directions:


  1. For the salad, prepare the pad Thai noodles and set aside in a large bowl.

  2. Next, boil shrimp and allow them to cook until they're pink and fully cooked through. Set aside.

  3. Prepare the dressing by mixing the dressing ingredients together until smooth and creamy and then set the dressing aside.

  4. Prepare the veggies and add them to the large bowl.

  5. Pour dressing on top and toss to fully combine.


Serve and enjoy!
