I'm looking forward to Thanksgiving dinner in just over a week! Thanksgiving has become one of my favorite holidays because it's all about food, family and friends without the stress of gift buying, decorating and massive to-dos lists.
Today, I'm sharing a potato recipe you might want to consider if you're looking to change things up a bit from traditional mashed potatoes. A common version of it is found on Mr. Dell's Potatoes packaging and website. My mom made this for any occasion when I was growing up. The recipe has all the good stuff - savory cheese and crunch. Cheesy, Cornflake Potato Casserole
Ingredients
- 10 cups of shredded hash browns
- 1/4 cup + 2 Tablespoons of butter
- 1 can cream of chicken soup
- 1/2 cup milk
- 12 oz. of sour cream
- 2 cups of shredded cheddar cheese
- 1 1/2 cups crushed corn flakes
Instructions
Preheat oven to 375° F.
Melt 1/4 cup butter and pour into 9 x 13 inch baking dish and then add 1/2 of the hash browns.
In a bowl, mix soup, sour cream and milk.
Add 1/2 of the mixture over hash browns and sprinkle the half of the cheese on top.
Add the rest of the hash browns, pour remainder of mixture on top and sprinkle the remaining cheese.
Coat the top of the casserole with crushed corn flakes and drizzle two tablespoons melted butter over it.
Bake for 50-55 minutes.
